So Nxd4 doesn’t work because of Qd7 by black, ok, but I think that neither does exd4 work, because black just plays Rfe8 protecting the e6 pawn, and if then white then plays Nc5, black can defend with Qd6.

The point is that black’s pieces will become passive as they are forced to defend the weakness, (the e6-pawn). Your pieces will be attacking (more active), black will be defending – a situation that usually favors the attacker.
